Son of art since childhood play and learn in laboratories pastry family, the historic Pasticceria Colzani of Cassago Brianza, which began with my father in 1977.Studies and travels have led me to know and learn new and different ways of working.With my return I have introduced new processes in our bakery. Indeed, our peculiarity is that everything we produce directly. We do not use any semi-finished stock and raw materials only in stores only sell products wholly produced by us.His passion for chocolate was born a few years ago, when over a roast and produce coffees I started to roast the beans. Then after much research and studies of craftsmanship nowadays almost disappeared, I started a laboratory processing of cocoa beans into chocolate.
